A yummy snack or starter or a filling main meal with salad. An easy meal that the kids can get involved with too!
Ingredients
1 1/2 cups cooked brown rice
150 grams of fresh spinach
3 tablespoons of sunflower seeds
3 tablespoons of pumpkin seeds
1 tablespoon of Braggs Liquid Amino’s or Tamari
1 tablespoon of Dulse Flakes (optional)
1 tablespoon of lemon juice
A sprinkle of Herbamare and Paprika
1 packet of Rice Paper Rolls
Prepare the spinach by washing and draining it, then steam it until it becomes cooked. Ideally, grind the sunflower and pumpkin seeds and stir into the cooked brown rice (if you do not have a grinder, try adding them into a food processor)
Mix the cooked spinach, herbs and spices into the rice and then place 3-4 tablespoons of the mixture into a wet, soaked piece of rice paper and roll them up.
Put on a tray and cook at 180 degrees until dry.
Serve with your favourite dipping sauce – enjoy!
